On March 4 Sandcastle met its goal of raising $17,000 to purchase a new soft serve ice cream machine.
Sandcastle owners Doug Flicker, Amy Greeley and Chele Payer originally planned to offer soft serve at the Lake Nokomis concession stand when it opened last summer, but couldn’t find a way to fit an ice cream machine into the budget.
They launched an online fundraiser on the website Kickstarter in mid-February with incentives for donating. For a $10 donation a person received a coupon for two ice cream cones, and additional prizes were offered for amounts ranging up to $5,000.
The ice cream machine will offer vanilla, chocolate and vanilla-chocolate twist flavors, but the creative culinary team behind Sandcastle hinted they have some interesting ideas to dress the soft serve up.
“We have the opportunity to take it to the next level, which would be soft serve ice cream with olive oil and sea salt, or breakfast cereal or anything else we can think of to put on it,” said Flicker.
Sandcastle is also planning to build an expanded patio and seating area this spring.
