The shuttered Rainbow Foods at 1104 Lagoon Ave. reopens Wednesday morning as Cub Foods.
The store has been closed since Sunday night, but the pharmacy remains open throughout the 60-hour, around-the-clock renovation.
On Tuesday, staff were switching out merchandise, hanging new signs and filling shopping carts with food to donate to Second Harvest Heartland.
“We’re keeping it fairly simple,” said Jeff Swanson, Supervalu’s director of corporate communications. “Most importantly we’re getting the store reopened as quickly as possible.”
Supervalu is purchasing 18 Rainbow stores in partnership with four Twin Cities grocers. The Lagoon Rainbow is one of 10 locations that will be rebranded into Cub Foods in the next two-and-a-half weeks, including the Rainbow location at the Quarry, 1540 New Brighton Rd.
Swanson said Cub’s produce department will benefit from seven-day-a-week deliveries from its distribution center in Hopkins. He said Supervalu has spent the past year focusing on produce price-point and quality, to ensure freshness for days after purchase.
The remodeled store includes a salad bar, grab-and-go meals, bakery, meat counter and deli.
Supervalu is hiring more than 700 positions for its new stores, and Swanson said a majority of the new hires are ex-Rainbow employees.
