Libertine is now open at 3001 Hennepin Ave., featuring reimagined bar standards and classic butcher’s cuts.
“We have a lot of meats, but we also have a lot of other options,” said Chef Tim McKee.
McKee highlighted the menu’s oysters served charbroiled, fried or raw on the half shell.
The bar offers cocktails (10 of them non-alcoholic) developed by La Belle Vie vet Johnny Michaels, as well as craft brews, ciders on tap, canned beers and a list of American whiskeys.
Parasole Restaurant Holdings closed the Uptown Cafeteria and Sky Bar this summer to renovate the space and overhaul the menu.
“This will have a completely different look and feel,” McKee said. “The dining room is a little warmer, a little more convivial. I don’t know of any restaurants like this, it’s hard to classify.”
