Hola Arepa is now open at 3501 Nicollet Ave., complete with a retractable food truck-style window.
Arepas (cornmeal griddle cake sandwiches) are made fresh daily, and the most popular arepas thus far are the slow-roasted pork and the shredded beef & plantain.
Co-owners Christina Nguyen and Birk Grudem refinished the table tops and chairs themselves. They’re making batches of cocktails and bottling them, including the “temper tantra” with spiced rum, dark rum, citrus juice, ginger beer and habanero.
“We had a crazy busy weekend,” said Grudem. “The neighborhood seems to be liking us.”
