Louie’s Wine Dive is opening in early May at 800 W. Lake St. on the ground floor of Blue Apartments.
The wine bar makes food from scratch and serves “big pours” — about six ounces, or four glasses per bottle.
“We try to take the pretentiousness out of wine,” said Corey Gonzalez of Louie’s Wine Dive Management.
He said that although “people call us crazy,” the wait staff opens any bottle of wine with the purchase of two glasses, regardless of price. Unfinished wine bottles are listed on a “deal of the day” chalkboard at a discount.
“That board is constantly changing daily and nightly,” Gonzalez said.
Louie’s Wine Dive has additional locations in Des Moines, Kansas City and Omaha. Each spot is locally owned.
“We never want to be considered a chain,” Gonzalez said.
He said the restaurants work to source local food, beer and wine. The menu features bottomless mimosas during weekend brunch, Lobster Poutine (fries topped with Maine lobster, portobello mushrooms, green onions and Fontina) and 4 Pork Gnocchi, made with four pork sausages from La Quercia meats in Iowa.
The restaurant will have about 100 seats, with a 24-seat patio on Aldrich Avenue. After the restaurant is established, jazz or acoustic musicians would likely play Friday and Saturday nights.
