Following a weekend test pilot for friends and family, Red Cow is now open at 50th & Drew, featuring gourmet burgers, desserts from Wuollet Bakery next door, and high-end wines available by the glass.
“We have the best veggie burger in town,” said owner Luke Shimp, describing a burger with avocado and salsa, sliced red cabbage and curry chickpeas.
Shimp said another house favorite is the “ultimate” burger, with Angus beef, cheddar, lettuce, tomato, onion, and Red Cow’s sauce: the burger’s “secret weapon.”
A wine preservation system behind the bar re-corks 32 bottles and shields them from oxygen exposure, allowing customers to sample pricy wines without the expense of buying an entire bottle.
Shimp previously worked as co-owner of the Blue Plate Restaurant Company, and he spent many years working as a mechanic on NASCAR racing teams.
