The newly opened 1800 Knox building near the shores of Lake Calhoun has a restaurant tenant lined up, as JJ’s Coffee and Wine Bar is seeking a wine and beer license at today’s city Regulatory, Energy and Environment Committee.
The proprietors of the restaurant, Jennifer and Mark Jundt, already operate a JJ’s in Eden Prairie. According to their business plan, JJ’s will offer a full menu, with pastries and baked goods in the morning; handmade sandwiches, Panini, and salads for lunch; and flatbread pizza, cheese plates, salads and appetizers in the evening.
1800 Knox is a 57-unit luxury apartment building that opened recently. It’s at the intersection of Lake and Knox, just a street crossing away from the north shore of Lake Calhoun.
JJ’s is slated to open in the first floor of the building, with seating for 51 inside and for another 20 on an outdoor patio.
It doesn’t appear that the restaurant will become an Uptown party spot. The owners are seeking only a wine and beer license and plan to close at midnight. They also need to meet the city’s 70/30 requirement by having food account for 70 percent of their sales.
