Local restaurant owners, environmental leaders and Mayor R.T. Rybak will gather Dec. 15 at the Wedge Co-op to launch a new restaurant composting project.
Eureka Recycling has teamed up with local restaurant owners Kim Bartmann of Barbette, Bryant Lake Bowl and the Red Stag Supperclub, Danny Schwartzman of Common Roots Cafe and Tracy Singleton of the Birchwood Cafe on the project.
The restaurants have also been urging the customers to sign up for the Minnesota Energy Challenge, which urges people to cut energy consumption at work and at home.
The kick-off event for the composting project will be held from 8:30–9:30 a.m. at the Wedge, 2105 Lyndale Ave. S. Speakers lined up for the event include Mayor R.T. Rybak, Eureka Recycling CEO Susan Hubbard, Bartmann, Schwartzman and Singleton. For more information, go to www.makedirtnotwaste.org.
